Chipped Beef and Gravy


2 (4.5 ounce) jars dried beef

1/4 stick of butter

1 cup scalding hot water

2 cups milk

2 heaping teaspoons flour


With kitchen shears, cut beef in narrow strips and place into large skillet • Add butter and water, bring to a boil • Cover and reduce heat to a simmer for 10 minutes to coax the flavor from the meat • Add pepper • Meanwhile, put flour and milk into a shaker and shake until smooth • Gradually add flour mixture to meat mixture over medium heat, stirring constantly  •  Have extra milk on hand to thin if gravy thickens beyond the consistency of a creamy sauce • Add more pepper if desired (you are not likely to need salt as the dried beef is salty) • Serve in tureen with a basket of homemade biscuits.
